The heart of our restaurant beats to the rhythm of the seasons. They are the ones who decide the moment... the instant when each offering, harvest, product will find its place in our cuisine. A cuisine in motion, generous, natural, subtle, full of nuances, whose main desire remains "flavors," full of spirit and meaning. That of taste above all.
Between January and March, chef Guilhem Sevin highlights the black truffle, pampering you with incomparable flavors.
The House has preserved many historical remains, which can still be seen today on the walls and ceilings of the restaurant, decorated with painted ermines and fleurs-de-lis. The fresco in the main dining room dates back to the 15th century. The House's coat of arms is depicted above the reception area, dating from the 16th century.
The building remains an essential pillar to support the facade of the Salle de la Grande Audience and the Grande Chapelle with the counterfort wall which is present in the Petit Salon.
Today, this energy transmitted by the Palais des Papes gives a comforting atmosphere to the House. Corinne SEVIN ensures the warm welcome and comfort of customers. Chef Guilhem SEVIN delights your taste buds and selects the wines to accompany your gastronomic moment.
