An explosion of flavors at Ferme du Bourgas – Les Angles

I make a first stop at village of Angles, Bourgas Farm to fill up on flavors. I love this family farm because she makes a point of cultivating seasonal fruits and vegetables respecting the methods of theorganic farming.

What I like about Ferme du Bourgas is that each fruit and vegetable is grown with care and it shows in the quality of the product. I take some apricots with an exquisite taste, divinely sweet with melting flesh. To this I add tomatoes with an intense flavor, which will be perfect.

Farm in Life Velleron

I continue my journey towards Velleron , Ferme En'vie. I recommend this place to anyone who wants good seasonal vegetables grown with passion and respect for the environment. In summer, I love to stock up on zucchini deliciously crunchy, peppers colorful and tasty eggplants.

What appeals to me about this farm is that it is agroecological and that they really engage in the preservation of nature and soil. Although he is in charge of three hectares of land, Cédric (the producer) makes it a point of honor to cultivate with respect for the environment through the permaculture and organic.

To prepare this tart, nothing could be simpler:

  • I use a pastry on which I have the almond meal then my apricots pitted simply cut in half or quarters.
  • I then sprinkle lightly with sucre and a little bit of butter to counterbalance the acidity of the fruits.
  • Then, I put it in the oven for 40 minutes at 180°C. Once out of the oven, I like to add a few sprigs of thyme to add a little extra flavor. And if you have a sweet tooth, add a scoop of vanilla ice cream

My recipe for classic Provençal ratatouille

  • I add pieces of goat cheese fresh, crushed nuts.
  • I water with a drizzle of honey (from Provence, obviously) and balsamic vinegar!

This salad perfectly combines the sweetness of the figs and the creaminess of the cheese.

And why not fig jam?

For even more figs!

  • I cut the figs into small pieces and make them cook with sugar (about 800g of sugar for 1kg of figs) and a little lemon juice.
  • I leave simmer until the mixture thickens
  • I simply put them in jars.

This jam goes perfectly with with cheese or fresh bread

Why choose seasonal fruits and vegetables?

Consuming seasonal fruits and vegetables has many advantages, both for the health needs that for the environment. Indeed, seasonal products are generally more nutrient-rich, because they are harvested when ripe. In addition, they often taste better and are cheaper, as they do not require long-distance transport.

Health Benefits:

Seasonal fruits and vegetables are more rich in vitamins, minerals and antioxidants, because they are picked at their peak. For example, summer tomatoes contain more lycopene, a powerful antioxidant, than those grown out of season. Similarly, summer peaches and apricots are an excellent source of vitamin C and fibers.

Environmental benefits:

By choosing local and seasonal products, I contribute to reduce carbon footprint related to food transportation. In addition, environmentally friendly agricultural practices preserve biodiversity and natural resources. Farms like the ones mentioned above often use techniques of sustainable culture which minimize the use of pesticides and chemical fertilizers

This weekend, I'm letting myself be tempted by the seasonal fruits and vegetables about destinations of Grand Avignon.
